Well, there's only one minor difference between Ed's watch and the rest of them. He carved something into the panel namely a date. 
As far as any other differences there are none. It'd probably be better to just approve the fanlisting for, "State Alchemist Watches" and not just Ed's specifically even though one COULD argue it plays a more important role for Ed. Seeing as how it's his personal reminder not to forget the day he left home, blah blah, etc, etc,
